Drying of Deer Antler Mushrooms
I. Project Background
Named for their resemblance to deer antlers, deer antler mushrooms are prized for their crisp texture and rich nutritional content; consequently, demand for them in the edible mushroom market has been steadily rising in recent years. However, due to their high moisture content and delicate tissue structure, these mushrooms are highly sensitive to drying temperature and duration. Improper temperature control can easily lead to issues such as surface scorching, internal dampness, discoloration, or a loss of aroma—factors that directly impact the product’s grade and market price. Therefore, selecting drying equipment that offers precise temperature control, uniform airflow distribution, and consistent batch-to-batch performance is critical to the successful processing of deer antler mushrooms.
II. Drying Solution and Equipment Advantages
For this drying project, an 8-meter-long, 2-meter-wide, 5-layer mesh-belt dryer manufactured by Jinlu Machinery was utilized, employing an air-source heat pump as the heat source. Compared to traditional coal-fired or electric-resistance heating methods, air-source heat pumps offer distinct advantages, including high temperature control precision, low operating costs, and zero pollutant emissions—making them particularly well-suited for drying edible mushrooms and other materials with stringent quality requirements.
Based on the specific drying characteristics of deer antler mushrooms, the technical team at Jinlu Machinery developed a customized three-stage, step-wise temperature-increase drying process:
Stage 1: 50°C for 2 hours—primarily to remove surface free moisture and prevent the mushroom surface from “crusting over” due to exposure to high temperatures;
Stage 2: 55°C for 2 hours—gradually increasing the temperature to facilitate the migration of internal moisture toward the surface;
Stage 3: 60°C for 4 hours—completing the deep-drying process to ensure the overall moisture content is reduced to a level safe for long-term storage.
The equipment is capable of processing a fresh-weight batch of up to 2 tons in a total drying time of just 8 hours. The 5-layer mesh-belt structure ensures thorough circulation of hot air throughout the material, resulting in uniform heating across all layers and eliminating the product damage and labor costs typically associated with manual turning. Once the equipment reaches stable operating conditions, it allows for continuous discharge, thereby significantly boosting processing efficiency.
III. Drying Results and Customer Feedback
Verified through actual production operations, the *Cordyceps militaris* mushrooms dried using Jinlu Machinery’s mesh-belt dryer exhibit the following characteristics:
Appearance:The mushrooms retain their complete shape and natural color, showing no significant shrinkage or deformation.
Coloration: Free from scorched edges, dark bases, or discoloration caused by oxidation.
Quality:Uniformly dried with excellent preservation of natural aroma; upon rehydration, the texture closely resembles that of fresh mushrooms.
Standards:Fully compliant with all market requirements regarding the circulation, packaging, and storage of edible fungi.
